So I had a 3 piece, biscuit, mashed potatoes & gravy, mac & cheese, raspberry iced tea and one of those little desert bucket parfaits (I had chocolate).

It wasnt as good as I had hoped, but it hit the spot.

Well, at least long enough to hold me over until my little debbies get cold :D

I'm going to have a major case of the itis tonight

my first thought was it needs color-lol! I dont like melted cheese on tacos and i didnt have any tomatos. once in awhile i will use chopped tomato otherwise i just use the red tomato salsa to go over the cheese.

i like it layered like this"::
chicken then lettuce, the the cheese then the salsa.

DH:
chicken,cheese,very lil lettuce then the salsa

So you melt you cheese?

No i dont melt it parse. I usually put the cheese on the tortilla or shell then the hot chicken then the lettuce and tomatoes, then salsa and/or sour cream. Sometimes even put more cheese on top of that. I dont need the cheese to be like totally melted, but naturally melted by the hotness of the chicken or beef.

interesting thats probably why dh put the cheese on the meat first.

Tonight we are making carne asada tacos, on homemade tortillas, cabbage,cheese and pato. Also some rice with it.

da husband and i shared the baby back rib plate with potato and veggies and we each had our own salad. Man i love their corn bread crutons yummm!
dd had mini corn dogs, fries and frozen grapes

that sounds good too! I'm going to have to try making homemade flour tortillas. Homemade tortilla with chorizo and beans mmmmmm!

i got a visual of some hard odd shape tortillas-lol! I know my first batch wont be perfect. I've heard some funny stories of peoples first time making tortillas.

Made myself a Kay-za-dila with Mozerella chizz, shredded some chicken, BBQ sauce and Mustard. Oh and a burrito tortilla. Regular tortilla kay-za-dila's are for pussys :mrgreen:

I'm making taquitos today. I make mine different not sure if others make them the same way. I make a broth and pour it over the taquitos, then top it with shredded cabbage, cut up cucumbers and sprinkled with cotija cheese then pur more broth and more cheese then salsa mmmmmm! I'll post a picture in my thread 'Twinklens delights" when i finsh making them.

i tried it once at the fair but it was to much for me. Dh liked it but once was enough for me. Maybe it depends where you get it.

i was going to try it a 2nd time when we went to walt disney world but didnt get a chance to since we were on the dining plan and had meals scheduled(too much food)

I got a late start so dinner is barely on the stove as i type. Figure something simple -spaghetti, salad and texas cheese toast. I usually make it with groundbeef but my dd doesnt like any in hers and i dont feel like making the beef.

Tomorrow it will be chicken avocado cobb sandwhich or jerk chicken

Friday, 5/8

a dish called bobwire but in spanish. your suppose to make it on the grill but i fry it but tonight maybe grill it

seasoned flap meat:mexican chef seasoning orange lid, garlic powder, onion powder,and peppercorn crushed(get the bottle with the grinder)

if you grill it do the pieces of meat whole if frying it then cut into strips.

once meat it done then in a seprate pan fry some sliced up onion and bell peppers then stir it into the meat for a fe mins. Then turn off stove and sprinkle some monetery shredded cheese let it sit until it melts on the meat.

serve on a plate then top it with mashed up avocado and sour cream oh so yummy. This is my favorite meal when i am on a low carb diet.

you can it it with side of beans and rice and flour tortilla but we skip the sides and load up on the meat and toppings. I'll post a pic in my threa later tonight
