^^^I had a PB&J, minus the mallows, for dinner last night. I had a HUGE, unhealthy lunch and was still a bit full.

Dinner tonight: Caldo de camaron y pescado.

Quinoa with roasted portabello mushrooms, vinaigrette dressing, almonds, spinach and flax seeds.

It's pretty good. I can't really describe the flavor, but the texture is kind of like couscous. It's a good source of iron and protein though.

I have a packet of couscous sitting in the pantry, do you have any advice on how to prepare it, or what to serve it with?

Usually I will just use it in substitute of rice. I use it as a breakfast, or as a dinner. For breakfast you can mix it with some bananas, apples, cinnamon, almonds, walnuts kind of like you would eat your oatmeal. And for dinner... just use it like you would rice. It's pretty easy to cook... boil a cup of water (or chicken broth for more flavor if it's a dinner recipe) then add a cup of the couscous, remove it from the heat, cover it with a lid and let it sit for like 10 minutes.

We have a quinoa/wild rice blend from Costco in the pantry. We only have it when we run out of rice, though. It's junk food Friday. Ima eat something bad for me over the next 18-20 hours. LOL!

Small cucumber and tomato salad with lemon pepper and salt. Side of canned spinach. And A homemade version of hamburger helper with shells instead of macaroni and diced steak and mushrooms with some chile piquin for good flavor.

Baked avacados and a salad for me .. country fried porkchops, rice, and beans for everyone else. It's like Burger King here - "have it your way", geh.

After I cut it in half, I just wrap the bottom half with the skin in foil (you don't have to, but I do), sprinkle with lime, pinch of salt .. bake in the oven at 450 degrees for 5 minutes .. topped off with a clove of garlic (minced), chopped cilantro, diced tomato, and pepper. It's pretty good.
